Lee's Fortune One Farm
We are a family of local Hmong farmers in Western North Carolina bringing you a fresh taste of Asian fruits and vegetables and heirloom rice. We’re dedicated to preserving our heritage and passing the knowledge to future growers. Lee’s One Fortune Farm is comprised of a small band of relatives that worked together in the traditional way of helping each other in growing food for our families. We do our best to practice "traditional" methods to grow our crops. In "modern" terms, it is more related to organic farming. Our method is not a set of row crops of the same species in neat rows. We practice a method that is very much part of the Hmong community for as long as we can remember. By creating a diverse number of plants, we are creating a biosystem that allows each plant to get support and supplement each other in water and nutrition. The random planting gives us the means to harvest crops as they mature all on the same site without leaving bare dirt for weeds to take up.

Anna Jackson and her dad, Robin, run and operate J4 Cattle Company, a beef cattle farm located in Morganton, NC. All of their cattle are raised on pasture up until the day they're taken to the processing facility. The cattle are supplemented with raw and malted barley, not spent brewer's grain. They work directly with a malt house to purchase barley that doesn't meet the germination requirements, which the malt house then sells to a brewery for production. Their beef is dry-aged for between 18-21 days at a USDA processing facility, which results in a more flavorful and tender cut of meat.

Fast forward to now, and with the help and support of our closest family and friends, we've transformed this land into an operational regenerative farm. We're focused on raising pasture-raised poultry and providing locally grown, pasture-raised non-GMO chicken straight from our farm to your home!

Birchfield Farm
Our farm is comprised of my wife, Stephanie and our two sons, Connor and Caden, and me, Brandon. From my earliest memories, I have been involved in a variety of farming activities with my family. For several decades, my parents and I farmed Burley Tobacco. After the demise of tobacco production, we diversified our farming operations to growing Kennebec potatoes. The potatoes have proven to be very popular, resulting in numerous repeat customers. Our farm is located in the Buladean Community of Mitchell County. Many people have said through the years that the soil at our farm produces potatoes with an excellent taste and texture quality. Along with the Kennebec Potatoes, we have green beans on a much smaller scale. One of the most prominent determinants of an outstanding potato crop is adequate rainfall, especially in the month of June while the potatoes are blooming. We typically like to plant our crops early in the growing season and hope for minimal late spring frosts.

True Apple Farm
David grows 25 different varieties of apples on 4 acres along Rice Creek in Erwin, TN. He uses a trellising technique that makes them easier to maintain and harvest and allows for high-density growth. Some of the varieties he has brought us this year include Querina, Fuji, Red Delicious, Jonagold, Cortland, Ambrosia, and Stayman Winesap. What started out as a fun and interesting hobby, the beautiful old farm with only around 30 apple trees, quickly grew into quite an established apple orchard. With the many hours of labor from David and family friend, Eddie Farmer, the farm has grown into a beautiful mountain-top orchard. From soil samples to proper irrigation, they have grown the orchard to over 2,000 trees and counting. They have recently built a packing house, a pavilion for schools and small groups, and continue to experiment with new varieties.

Persephone’s Garden
Chris & Christy grow vegetables, herbs, and flowers but specialize in many varieties of tomatoes, eggplant and lettuces. The farm is spring-fed with low amounts of sulfur in the ground, which promotes very sweet tomatoes and eggplant. Since the ground is naturally moist due to the spring, lettuces of all kinds thrive here, even during the height of summer, and have a flavor second to none. As we grow and expand, we look forward to reaching more people who enjoy the time and effort it takes to grow our produce and hope they enjoy it as much as we enjoy farming it. We are a conservation farm, which means we follow many practices included in organic, regenerative, and other practice models to keep the land we farm better than when we started.

Shipley Farms
Since 1872, the Shipleys have been a prominent farming family in the “High Country” of the Southern Appalachians, producing the same clean, well-marbled, and delicious beef that has fed our family for generations. Shipley Farms Signature Beef is raised with no shortcuts–no steroids, no antibiotics, no feedlots, just hard work and great care for the land, the livestock, and the community. GrayShipley came about Farming honestly; it was just a more roundabout way than the average 5th generation farmer. As is typical with many small, multi-generational, Appalachian farms, the kids grow up, get an education, never to return to their roots. Like his dad before him, that’s how Gray started. After undergrad at Alabama (Roll Tide), a stint in the real world, an MBA from Dartmouth, and a career as a serial entrepreneur, Gray found himself partnering with his Dad, Bob Shipley Jr., and his 101-year-old granddad, Bob Shipley Sr., to revitalize their Centenarian, ancestral cattle farm. Gray’s experience as an entrepreneur, coupled with his experience as a farmer, lends a unique perspective on local economies and supply chains, as well as the challenges farmers face on a daily basis.

That same year, the original founders of SunshineCove Farm were seeking new stewards for their business, and the transition was seamless. Reverence Botanicals

The vibrant plants are a by-product of that. They use farm-made compost, homemade fermented plant juice fertilizers, worm bins, cover cropping, mulching, and biodynamic preps to nourish the land. Both Jem andMeredith have experienced chronic health challenges that allopathic medicine has not been able to offer much guidance for. Having a deep love and reverence for the herbs, they started to craft their own remedies to help them on their path to wellness. Their small business has been written about in herbal books, has been mentioned in clinical herbalism journals, and got worldwide attention during the pandemic for specialized, sought-after American-grown herbs. The Kleins feel that the health of the planet is deeply tied to the health of the human body.
